How to prepare chicken before frying?

Marinating the Chicken:

  • Start with washing the chicken pieces thoroughly with warm water and let them soak for a while.
  • Now, pour the milk or buttermilk into a bowl, put 4 tbsp of lemon juice, and stir it.
  • Take all the ingredients mentioned in the ‘Ingredients for marinating the chicken’ section and put them in a bowl. Then, mix it properly. After that, add buttermilk to it.
  • Dip all the chicken pieces into the prepared spicy marinated milky paste.
  • Remember to soak the pieces properly in the paste. Then, leave the marinated chicken for 8 to 10 hours with refrigeration
  • Do not leave the chicken broast marinated for more than 24 hours.

There are three easy and simple ways to cook and fry the chicken and make a delicious broasted chicken. They are:

Broaster Approach

  • Before putting the oil into the broaster machine, you must preheat the broaster until it reaches 360℉ (182℃) and then pour oil into it.
  • Once you see the oil reaching the desired temperature, start putting the coated chicken pieces one by one into the hot frying broaster. You can start putting the big pieces first like the breast pieces.
  • Now, gently close the lid of the broaster and continue frying the chicken for 8 to 10 minutes. Fry the chicken pieces till they are golden brown.
  • By using a hand meter, you must keep on checking the internal temperature of the broaster. Try maintaining the inner temperature to 165℉ (74℃).

Stovetop Approach

  • For that, you need a medium-sized lid-covered frying pan or a dutch oven.
  • Pour the oil into the pan and light up the fire. Keep the burner on medium level and let the oil heat up. Attach or place a thermometer near the pan and keep on checking the temperature through the thermometer.
  • Once the temperature reaches 365℉ (185℃), start putting chicken pieces, one at a time, gently into the pan. Keep on stirring the chicken pieces during the frying cooking. Maintain the temperature around 360℉ (182℃).
  • Once you notice the temperature stabilizes around 360℉ (182℃), remove the thermometer and place the lid on the frying pan. Let the chicken stay inside the pan for 10 to 15 min, until the chicken pieces get golden brown. Remember to maintain the inner temperature at around 165℉ (74℃).
  • Additionally, you must know that when you cover up the pan with the lid that would increase the temperature a bit, but that is ok. You may remove the lid and check the oil after a few minutes.

Instant Pot or Pressure Cooker Approach

  • Ideally, an instant pot is a better choice as it has the option of adjusting the temperature to 365℉ (185℃). So, you can only use a pressure cooker if it provides the same option.
  • Preheat the instant pot or pressure cooker until the temperature reaches up to 360℉ (182℃). Now, pour the oil into the pot or pressure cooker, and wait for a while until it becomes hot.
  • Once the oil becomes hot, start putting the chicken pieces one by one. The best approach would be to place large breast pieces at the bottom of the pot and then the remaining pieces.
  • Cover up the lid and fry-cook the chicken for about 15 to 18 minutes, till they get golden brown. Maintain the internal temperature of the instant pot up to 165℉ (74℃). For that, you can use the hand thermometer.
